Making Sense

The management at the Pullman Gurgaon hotel promises a grand retelling of the tired old tale — all-day coffee shop — through Sen5es. Their ‘all-day dining innovation’ delivers just that. Filled with light and air,the restaurant occupies a huge space at the lobby level. Given that there are five senses, the number is a central motif to the entire concept. Five island kitchens are spaced out across the restaurant, each serving a different cuisine.

As we walk in,our attention is arrested by a ‘community dining table’. A solid bastion of old grainy wood, the table commemorates the Pullman Coaches, after which the hotel is named. Meant for

people who are dining alone, the table is made out of actual rail sleepers on which the Pullman coaches ran. Caution: don’t expect to get a seat there unless you are dining alone.

We saunter over to the Oriental section to begin our meal. After much deliberation,we have a noodle soup and duck pancake rolls. Comprising udon noodles, bok choi, broccoli, shredded chicken, mushrooms, fried garlic and chef-knows-what,the flavour of the soup is subtle but highly distinctive. The duck stuffed pancakes are equally good — the rolls soft and the meat well-cooked.

For the main course,we decide to stick to pizza and ask for a variety of slices. We are served the pesto, four cheese and of course, pepperoni. While the pesto is much the same as you’d get at any decent pizza place, four cheese and pepperoni are exceptional. The pepperoni seamlessly amalgamates into the cheese, its fat spread all over the pizza, ensuring that you always get a taste of the sausage even if you don’t get an actual bite of it.

Finally it’s time for dessert. The ice cream teppanyaki counter is the thing an evil scientist with a sweet tooth would come up with. One gets to choose the flavours, then what kind of “extras” (from chopped-up chocolate bars to cookies to marshmallows) and then the sauce. After this luscious litany, the chef takes over, combining all ingredients on a chilled teppanyaki counter and serving up your very own brand of ice-cream.
