On the food trail with Jock Zonfrillo
Nomad Chef presents ancient cuisines from around the world

By Karan Shah
Ensconced in the comfort of our sitting room, TLC’s latest show, Nomad Chef takes us on a foodie trail in to the heart of some of the remotest communities and inaccessible places around the world. What makes the show exciting is that we gain first hand experience of some of the rarest cuisines from countries like Vanuatu, Ethiopia, China, Philippines, Japan, Australia, Peru, Belize, Faroe Islands and Spain. The show will be hosted by international chef Jock Zonfrillo, who will meet the inhabitants of these places who hunt for their food.
Each episode will showcase amazing facts about the natives the ingredients that they use and the manner in which they cook. The strong cultural significance amongst people will make up a large part of the show as well.
“For 26 years I tried avoiding television, but when I got a call for Nomad Chef, I became very excited as the show also echoes my philosophy about life. Intensive research, from finalising the countries and the communities that we wanted to cover was involved. We wanted to make a programme that would interest the viewers and build an intrigue about the show. Unfortunately, we couldn’t cover India in this season, but I would love to explore the country,” says Zonfrillo.
Partaking of unique preparations, the chef had a great time exploring these countries. “I can’t grade the best place, but I must mention that one spice mix Berbere from Ethiopia tastes great and is already a favourite for staff meals in my restaurant. Also, while in Ethiopia, I realised that they eat raw cow’s stomach, which is considered a traditional food on Christmas Day. Although, it wasn’t appetising, since it was a part of their tradition, I had to eat it. I wouldn’t eat it again though,” admits Zonfrillo. The show is telecast on TLC on Saturday and Sunday at 7 pm.
